Please tell me I'm not the only one who would totally geek out if ever the opportunity arose to meet The Pioneer Woman. I have a crush. I'll admit it. Upon meeting her, I would probably slobber and say something so dumb that it would later require me to sit on my couch, make-up less, in my yoga pants, surrounded by friends who love me enough to hold my hand and lie to me saying things like, "Telling her you want to have a sleep over and brush her hair fifty times before bedtime like on that one Little House on the Prairie episode isn't weird at all. I'm sure she liked it when you held her hand and asked if she wanted to skip."
I have friends who could say those things with a straight face if I was crying into the couch. I pray you have friends like that too.
It made a little more sense to sit in front of Ree's* blog when I lived in the United States and actually had access to all the ingredients listed in her recipes. *We're best friends, remember? So I can call her Ree. Sometimes I call her Ree-Ree.
A move to Haiti isn't going to make me dump one of my favorite farm girls.
Because I'm having a nice moment I thought I'd share two fabulous Pioneer Woman finds.
Tortillas and Salsa.
I was really skeptical. Pioneer Woman is a lot of things but she's not Mexican and she's not from Texas. What does she know about tortillas and salsa?
Only some states know how to do salsa. Can we agree on that? Texas is one of those States. If my love for Pioneer Woman wasn't already deep and a tad bit psychotic I would have never tried a recipes for tortillas or salsa from someone who lives in Oklahoma. Ain't no way.
I've never been more glad to be certifiably obsessed with a person to the point of totally overlooking the fact that they are not named Lupita and they're not from Texas. This time "crazy" worked out in my favor. We're happily eating tortillas and delicious salsa right here in Haiti, the unlikeliest of places.

Restaurant Style Salsa
Only modification I made: I added more salt. Cause we must want our hearts to explode. What can we say? We like salt.
Homemade Tortillas
I make a double or triple batch of the tortillas, roll em up in balls and then freeze them. On taco day I simply take out however many dough balls (snicker) I need, let them thaw, and then proceed with the directions for cooking the tortillas.
The tortilla recipe calls for lard. What weird stuff. Thankfully my farming family sends me to Haiti with ziplock bags full of high quality, nothing like Crisco, kind of lard. Yes. The people who scan our bags at the airport think we are total freaks. I don't even care. When they look at me with disgust for carrying 25 pounds of cheese in my luggage and ziplock bags of lard in my carry-on I look them straight in the eyes and say, "We live in Haiti. You have no idea. No. Idea!" If I'm at the Houston airport I can say, "Can you imagine your life without cheese and tortillas?"
The American Airlines people get a little misty eyed and wish us Godspeed.

Oh, I am so addicted to Pioneer Woman's blog and I enjoy every section and post she writes. I have her cookbook and I hope to purchase the book of her romance with Marlboro Man and the kids book about Charlie too! I feel like a personal friend of Ree. I am from Oklahoma, but oh no, I have not met her personally. Maybe some day.
I greatly admire you and your family, as well. I like to read your blog. You and your family are doing an awesome thing for the people there and the Lord will bless you for it. My prayers are with you.

Yes! I have the same feelings about P-Dub (when we become friends, that is what I'll affectionately call her) and when I was living in Uganda for a few months last year, I sent her an email asking her to please post recipes with ingredients I could get. Or fly out to the village and cook with me.

I've been following your blog for about six weeks now. I think I followed the link from Rage Against the Minivan, which I found the same night through a comment from a Simple Mom writer's personal blog (she's an adoptive parent).
Anyway, first I wanted to say that you've been in my thoughts and prayers since then as you serve in Haiti. I've been thinking lots of other things about what you've written, but this probably isn't the place to get into that. Just wanted to let you know that someone random out there was reading this and thinking of you and the people of Haiti.
Second, it usually takes a food post for me to stop lurking. I'm kind of a foodie. We don't eat pork so no lard for us but I'm really intrigued by the idea of you carrying it in your carry on. I was reading in December about what kinds of holiday food wouldn't pass the TSA test and I'm kind of surprised that lard did. Did you put it in your carry on so that it wouldn't melt in your luggage or something? And did you have to do something special for the cheese in your checked luggage? Inquiring minds want to know.

Good to meet you! I have brought in lard and cheese two ways. Once I put it in a carry on. The other time I put in our checked luggage. Both times I put it in insulated bags with an ice pack. It traveled great. Was still super cold when we unpacked in Haiti.
Our freezer is FULL of cheese. Happy day!

Lard have mercy, you crack me up. I'm a Ree Ree fan myself. And, like you, would've been skeptical to try a non-Texan's version of salsa had I not already been charmed by her humor and photos.
I feel you pain. I also love the Pioneer Woman but moved to East Asia last summer and most of the stuff is unavailable. I do have a friend though that also lives overseas and has a cooking blog. You should check it out.

I just picked up her cookbook last week! All I can do is stare at her kitchen and try to remember that one envy commandment. Good "lard" it's amazing. lol! I'm going to start saying that now, and we'll see if my family thinks I've finally gone bonkers. :-D

I love yours because I can make them when I have access to whole wheat flour (about half the time) AND use French Butter instead of lard when I run out.
It's so great to be able to make tortillas with or without whole wheat and with or without lard.
Now nothing can put a damper on my tortilla consumption.

You are hysterical. Have you ever made PW's Chicken Spaghetti?? It is the BEST!! I think the only thing that could possibly make it better would be the introduction of bacon!
When we moved to Baytown from Brenham a couple of years ago, I had Las Fuentes salsa withdrawls. There are a zillion Mexican restaraunts in Baytown, but I have a serious hangup for Las Fuentes red and green sauce!
When we went to Haiti this summer, three people in our group carried frozen cheese and lunch meat in their carry on. Security asked if they were opening a store, lol.
I'm a huge Pioneer Woman fan too! Totally understand the geeked-out reaction/obsession as I'm the same way. And I love her salsa too!
In reading the comments just now, yes, you definitely need her cookbook! I read it from cover to cover and thought it was so well done and perfectly PW of her. The recipes, of course, are fantastic!

And my comment has nothing to do with salsa, (although, living so close to Mexico for 6 years, I agree that it's painful to live on a tropical island with no Mexican food....we have it weekly, at home)
